2026 a new beginning…and an iced latte to celebrate..

January is already flying by ever so swiftly, school returns in a week, can you believe it! 

Christmas and new years are done and dusted for another year and the summer holidays are in full swing.

Days have been spent relaxing at home, eating summer fruits and berries, enjoying time with my 6 year old, colouring in and cafe dates together..Also river walks; rail trail rides; afternoon runs; yoga on the verandah; backyard soccer games; weeding, pruning and tending to pot plants; watching the birds and butterflies from the back deck and contemplating what this new year may bring.

And speaking of new beginnings, I’ve found myself craving iced coffee, and if you know me, you would know that I’m a pretty avid tea drinker. But lately I’ve been loving the occasional iced coffee, I should say iced latte; just ice, coffee and soy or almond milk, no sugar, no cream or ice cream or anything fancy. It’s refreshing and simple and great on really hot days.

So I decided to recreate an iced latte using coffee iced cubes. I came across a photo a while back of something similar and wanted to see if I could make it and whether it actually tastes any good. And the results were actually quite pleasant. 

This recipe is actually super easy, and you could even make extra coffee iced cubes to have on hand for when the craving strikes.

May the year of 2026 be all that you need it to be, filled with as much joy, abundance, good things and nature as possible; well that’s what I’m aiming for. 

Oh and trying new things, letting go of old ways of being that no longer serve, and embracing something new, whether it’s iced coffee or tango dancing!

Iced Latte

A refreshing coffee Iced cube latte
Prep Time 5 hours
Cook Time 5 minutes
Servings 2

Equipment

  • 1 Coffee Plunger
  • 1 Iced cube tray

Ingredients
  

  • 1 tbsp Ground coffee
  • 250 ml Plant milk of choice
  • 2 tsp Sweetener of choice Optional
  • 250 ml Boiling water

Instructions
 

  • Add around 1 tbsp of good quality organic ground coffee to a plunger
  • Pour in around 250ml of boiling water, let brew for a couple of minutes and then strain using the plunger
  • Once the brewed coffee is cooled, pour into an iced cube tray
  • Place in the freezer to freeze for around 4-5 hours or more
  • Once the coffee cubes are frozen remove from the freezer, add half of the tray to each glass. Add sweetener if using.
  • Top up with milk of choice, stir and drink. You may need to add more milk as the cubes melt.
