Parmesan ‘cheese’ sprinkles, loaded with nutrition and goodness(vegan)..

It took me a while to get on board the vegan parmesan train, but I soon realised it’s a great way to first add flavour to a dish, and to also add extra nutrition. Plus it is super easy to make and really versatile too, you could use whatever nuts and seeds you have on hand.

I’ve used pepita’s in this recipe to give it an additional nutritional boost;
-Pepitas are filled with minerals such as iron, magnesium, zinc and copper, they are also a great source of Vitamin A, protein and healthy fats(1).

It goes perfectly sprinkled on soups and stews, like minestrone or lentil stew, baked or steamed veggies, pasta of all kinds, whatever needs a little extra flavour. It’s fun for the kiddos to add to their own meals as well.

And it only uses 3-5 ingredients.

Parmesan ‘cheese’ sprinkles

A nutritional loaded addition to meals
Prep Time 10 minutes
Servings 1 Small jar

Equipment

  • 1 Food processor or small blender

Ingredients
  

  • 1/3 cup Pepitas
  • 1/3 cup Almond meal
  • 2 tbsp Nutritional yeast flakes
  • 1/2 tsp Salt
  • 1/4 tsp Turmeric powder (optional)
  • Optional extra Garlic powder

Instructions
 

  • Add all the ingredients to a food processor or blender and process/blend on medium until a fine crumb texture has formed
  • Store in a small jar in the fridge and sprinkle a teaspoon or so on meals as desired.
