The elusive greens, how can we eat more?

It can be really hard to eat enough greens, and often they end up wilted in the bottom of the fridge and are destined for the compost or worst still landfill.

Do you struggle with getting enough greens into your diet?

Green smoothies are kind of over done but I really want to inspire you to try and get a few more greens into your diet and I think smoothies are a really great place to start. And are super easy too. And the kids usually love them.

There are a number of greens that are much better suited to a smoothie than others. Things like curly leaf kale, baby spinach and sprouts are probably the best. I’d avoid things like silver beet /chard as they’re higher in oxalic acid and might end up hurting your tummy if eaten in large quantities.

If you are sensitive to oxalic acid from greens you can always soak and lightly cook the greens in water first and discard the water, this will remove a lot of it.

Curly leaf Kale

With this smoothie I’ve focused on decreasing the fruit content as oftentimes green smoothies end up loaded with fruit and a tiny bit of greenery added in, I like to do the opposite and load up the greens and reduce the fruit. You can work your way up to doing this as it can be a bit overwhelming to start with. Also adding in lots of healthy yummy fats can help make it more palatable. Like nut butter, avocado and coconut yoghurt.

Adding a greens powder like spirulina to the mix is a good option to get even more nutrients in. It’s also important to start with small amounts of any greens powder to begin with.

You can purchase the nut nutter, hemp seeds and Spirulina powder from your local or online bulk food store to save on plastic packaging. And you can also make your own Almond or Plant based milk (Recipe coming soon). And if possible purchase the fresh fruit and veggies either organically or locally grown where possible.

Simple Green smoothie

Servings 1

Ingredients
  

  • 1 Medium Banana (fresh or frozen)
  • 1 Handful Curly leaf Kale (Stems removed)
  • 1/4 Medium Avocado
  • 1 tbsp Nut butter (Almond or Peanut)
  • 3/4 Cup Unsweetened Almond Milk
  • 1 tsp Spirulina powder
  • 1/4 Cup Hemp Seeds (plus extra for sprinkles)

Instructions
 

  • Add everything to a blender and blend on high until smooth and all the kale has been blended. Serve in your favourite glass or bowl and sprinkle with extra hemp seeds and eat with a spoon as it is thick! Enjoy!
